Lemon Cranberry Almond Crunch Bars

I’ve been craving some power-packed protein lemon-cranberry bars ever since Shaklee discontinued the 180 Lemon Cranberry Snack Bars.  Mine are different but satisfy the lemon craving, plus there’s a surprise healthy crunch in every lemony bite. No, there are no nuts {just almond butter} but you’ll love the crispy, crunchy brown rice cacao crisps.  They add a whole new dimension in texture, taste and nutrition.

1 cup Instant Protein Soy Mix
1 cup Old Fashioned Oats
2 T Ground Flaxseed
1 cup Brown Rice Cacao Crisps {One Degree Organic Foods – Costco}
3/4 cup Dried Cranberries { coarsely chopped}
1/2 cup Glazed Lemon Peel {chopped smaller than cranberries}
1 cup Almond Butter
1/2 cup Raw Honey
Juice from 1 Lemon
2½ t Lemon Flavoring

Use all organic if possible. Combine oats, protein, flax, brown rice crisps, cranberries and lemon peel in large bowl. Set aside. Bring honey to a boil on stove top. Remove immediately from heat and stir in almond butter, lemon juice and flavoring until smooth. Immediately add honey mixture to dry mixture until well incorporated. Stir/knead until well mixed and press into an 8 X 8 square pan. Refrigerate 20 minutes or until firm.

Cut into 16 squares {approx. 165 calories each} or smaller bite-size squares and serve. Store bars in airtight container.

There is approx. 2640 calories in the total ingredients so divide the number of bars into that to determine calorie count of the size you choose to make.
